Peel, core and slice apples.
Preheat oven to 350°F.
Coat an 8x8 inch baking pan with butter or oil.
Prepare filling:
a. In a frying pan over medium heat: melt 1 tablespoon of butter.
b. Add sliced apples, cinnamon and sugar; cook for 5 minutes.
c. Set aside, will be used in step #7.
Prepare sauce:
a. In a medium saucepan over medium heat: add butter, brown sugar, water and cinnamon; bring to a boil.
b. Reduce heat and simmer for 3 minutes, stirring constantly
Soften tortillas by heating them up for a few seconds on a warm “comal” while being careful not to burn them; a skillet or shallow pan can also be used.
Place soft tortillas on a flat surface; one by one spread a small amount of sauce on the tortilla and fill evenly with apple filling.
Roll up tortillas and place side by side, seam side down, in the baking pan you prepared in step #3 (toothpicks can also be used to keep tortillas from unrolling).
Pour remaining sauce evenly over rolled tortillas.
Bake for 20 minutes.
Serve warm.
