Servings: 5 5 servings; (1 serving = 1 salmon patty)
- 2 eggs slightly beaten
- 2 tbsp prepared or spicy brown mustard
- 2 tsp dried dill weed
- 1/4 tsp pepper
- 2 cups rice cereal
- 3 (5oz) can salmon drained, flaked and skin and bones removed
- In medium bowl combine eggs, mustard, dill weed and pepper. Stir in cereal. Add salmon. Mix thoroughly. Shape into five 3/4-inch-thick patties.
- In large nonstick skillet coated with cooking spray, cook salmon patties over medium heat for 6 to 8 minutes or until browned, turning once. Serve with pickle relish, tartar sauce or mayonnaise, if desired.
