  • 1 tbsp mafuta
  • 1 kikombe finely diced leeks
  • 1 stalk celery iliyokatwa vizuri
  • 2 shallots kusaga
  • 1 kamba vitunguu kusaga
  • 4 vikombe unsweet soymilk
  • 1 kikombe hisa ya mboga
  • 2 vikombe punje za mahindi zilizogandishwa
  • 2 viazi za kati peeled na kung'olewa
  • 1 jani la bay
  • ½ tsp safi thyme
  • 1 tsp chumvi
  • ½ pilipili nyekundu seeded and finely diced
  • Pilipili nyeusi mpya safi
  • 1-2 tbsp chives or fresh tarragon for garnish

Method
 

  1. Heat the olive oil in a soup pot over medium heat. Add the leeks, celery, shallots and garlic and cook for 3-4 mins.
  2. Add soymilk, vegetable stock, corn kernels, potatoes, bay leaf, thyme and salt. Bring to a boil and simmer until potatoes are tender, about 5-7 mins.
  3. Remove 1 cup of the vegetables and ½ cup of the liquid. Puree until smooth and return to the pot.
  4. Add the bell pepper and simmer another w mins. Season to taste with freshly ground pepper.
  5. Garnish each serving with chopped chives or tarragon.
