Cucumber Watermelon Salsa

This brings two summertime staples, cucumber and watermelon, together for a fresh new taste! Although this is a salsa recipe and the serving size listed reflects that, a larger portion can make a great side dish! This is a featured recipe from our Preschool Food Adventure.

Ingredients

  • 1 cucumber diced
  • 3 cups diced watermelon
  • 1 mango diced
  • ½ bell pepper diced (red or yellow)
  • ¼ cup diced red onion
  • 8 fresh basil leaves finely chopped
  • teaspoon lime zest about 1 lime
  • ¼ cup lime juice about 3 limes
  • 1 tablespoon honey
  • teaspoon garlic powder
  • teaspoon salt

Instructions

  • Combine cucumber, watermelon, mango, bell pepper, onion, and basil in a large bowl. To a small bowl, add lime zest, lime juice, honey, garlic powder, and salt and whisk together. Pour lime juice mixture over salsa and mix gently. Serve with chips.
