- For the potatoes
- 6 medium russet potatoes
- 1-2 tablespoons vegetable oil
- For the toppings
- 2 tablespoons olive oil divided
- 1 large onion sliced
- 1 cup mushrooms sliced
- 2 cups broccoli florets
- ½ cup fully cooked bacon bits
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 cup diced roma tomatoes
- ½ cup sliced green onions
- ¼ cup jarred jalapeno slices
Preheat oven to 425F.
Prick potatoes all around with a fork, lightly brush each with vegetable oil and bake for 40 minutes. *For a quicker alternative, prick potatoes all around with a fork, wrap in a damp paper towel and microwave for 7-8 minutes.
While the potatoes are baking, prepare the toppings:
For the onions and mushrooms, add 1 tablespoon of olive oil to a pan over medium-low heat. Caramelize onions for 8-10 min. Add the mushrooms and sauté for an additional 3-5 minutes until softened.
For the broccoli, add 1 tablespoon of olive oil to the pan over medium heat. Sauté until tender for 6-8 minutes, adding a few teaspoons of water as needed to soften.
For assembly: place all toppings in small bowls and have your guests mix and match!
