Banana Muffins
Yogurt makes these banana muffins deliciously moist!

- ¼ cup butter softened
- ½ tsp baking powder
- ½ cup sugar
- 1 egg
- 1 cup plain yogurt or soymilk dairy-free yogurt alternative
- ½ tsp vanilla extract
- 1½ cups whole wheat flour
- 1 tsp ground cinnamon
- ¼ tsp salt
- 2 bananas diced
Preheat oven to 400°F.
Lightly grease 12-cup muffin tin or place paper liners in muffin tin.
Beat butter, sugar and egg with an electric mixer until fluffy.
Add yogurt and vanilla and beat until smooth.
Combine flour, baking powder, cinnamon and salt in a medium bowl.
Add flour mixture to yogurt mixture and mix well.
Gently stir in bananas. Spoon batter into muffin cups, filling each one about ¾ full.
Bake 20 mins until baked through.
