Banana Muffins

Yogurt makes these banana muffins deliciously moist!

Ingredients

  • ¼ cup butter softened
  • ½ tsp baking powder
  • ½ cup sugar
  • 1 egg
  • 1 cup plain yogurt or soymilk dairy-free yogurt alternative
  • ½ tsp vanilla extract
  • cups whole wheat flour
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • 2 bananas diced

Instructions

  • Preheat oven to 400°F.
  • Lightly grease 12-cup muffin tin or place paper liners in muffin tin.
  • Beat butter, sugar and egg with an electric mixer until fluffy.
  • Add yogurt and vanilla and beat until smooth.
  • Combine flour, baking powder, cinnamon and salt in a medium bowl.
  • Add flour mixture to yogurt mixture and mix well.
  • Gently stir in bananas. Spoon batter into muffin cups, filling each one about ¾ full.
  • Bake 20 mins until baked through.
