Blueberry Muffin Overnight Oats

These vibrant blueberry muffin-inspired overnight oats are the perfect start to your day!

Equipment

  • food processor or blender

Ingredients

  • 1 cup milk of choice
  • ½ cup frozen blueberries
  • 1 tablespoon honey or maple syrup
  • ½ lemon juiced
  • ½ teaspoon ground cinnamon
  • ¼ – ½ teaspoon almond extract depending on taste preference
  • Pinch of salt
  • 1 cup quick oats divided
  • 1 tablespoon chia seeds divided
  • Toppings: granola fresh blueberries, peanut butter, extra honey, nuts or seeds

Instructions

  • In a food processor or blender, add milk, frozen blueberries, honey, lemon juice, cinnamon, almond extract and salt. Blend until smooth. The mixture may be frothy, let it sit for a few minutes to settle.
  • Add ½ cup of oats and ½ tablespoon of chia seeds into two separate airtight containers.
  • Pour the blueberry milk mixture into each container, evenly.
  • Stir each container to combine evenly.
  • Put lid on each container and place in refrigerator for at least 4 hours, preferably overnight.
  • The next day, remove from fridge and stir.
  • Add your toppings of choice and enjoy either hot or cold.
