Blueberry Salad Dressing
A bright, refreshing addition to your favorite springtime greens.

- 2 scallions
- 3 tbsp maple syrup
- 4 garlic cloves
- 1 tbsp Dijon mustard
- ½ cup frozen blueberries
- ¼ cup red wine or apple cider vinegar
- 2 cups original soymilk
- Salt & pepper to taste
Combine all ingredients except soymilk in a blender or food processor. Pulse in short bursts to blend ingredients well.
With processor on high speed, pour soymilk is a fine stream until texture becomes creamy. Season to taste.
Pour over your favorite salad.
