Salmon Salad with Strawberry Yogurt Balsamic Vinaigrette
A protein-packed salad filled with crunchy veggies and topped with a creamy strawberry probiotic yogurt dressing.
Servings: 2
- 4 cups chopped romaine lettuce
- 1 cup diced cucumber
- 1 cup diced red or orange bell pepper
- ½ cup diced red onion
- 1 medium avocado diced
- 1 7 oz can salmon, packed in water
- 4 large strawberries diced
- ½ cup chopped pistachios optional
- Dressing
- 1 tbsp extra-virgin olive oil
- 2 tbsp balsamic vinegar
- 3 tbsp strawberry probiotic yogurt
- Pinch of salt and pepper
Divide salad ingredients into 2 large bowls.
Mix dressing ingredients in a small bowl to combine.
Pour dressing over salads. Add optional nuts and seeds, as desired, and serve.
