Ingredients

  • 1 teaspoon olive oil
  • cup mushrooms sliced
  • 1/8 teaspoon salt
  • ½ cup baby spinach
  • 2 tablespoons unsalted butter divided
  • 2 slices sourdough bread
  • 1 teaspoon Dijon mustard divided
  • 2 ½ ounces provolone cheese

Instructions

  • Heat a skillet over medium heat with olive oil. Add mushrooms and a pinch of salt. Cook 3-5 minutes, stirring occasionally, until browned. Add the baby spinach and toss until just wilted. Set veggies aside and pat dry to remove excess moisture.
  • Add 1 tablespoon butter to the skillet.
  • Once melted, add 2 slices of sourdough and toast on one side.
  • Remove from pan and add ½ teaspoon of Dijon mustard to the toasted sides. This will be the inside of the sandwich.
  • Layer your grilled cheese – half the provolone, veggie mixture, remaining provolone.
  • Now add the second tablespoon of butter back to the skillet and let melt. Cook in a skillet over low-medium heat for 3-4 minutes per side, until golden brown and the cheese is fully melted.
  • Serve hot.
