Spinach Quiche
A classic savory quiche made with spinach, tomato, onion, cheese, and yogurt.

- 1 tsp vegetable oil
- 1/3 cup diced onion
- 1/3 cup diced fresh tomatoes
- 1 pkg 5 oz fresh spinach
- 1 cup plain yogurt or soymilk dairy-free yogurt
- 6 eggs
- ¾ cup shredded reduced fat mozzarella
1.Preheat oven to 350° F.
Heat oil in sauté pan over medium heat. Add onions, then cook and stir 3-4 mins until soft and slightly golden. Add tomatoes and spinach, add cook 1-2 mins or until spinach is wilted.
Whisk eggs in medium bowl, then add yogurt and whisk until smooth. Add spinach mixture and cheese and stir to blend.
Pour mixture into a lightly greased 9-inch pie plate. Bake 30-35 minutes or until set.
