Preheat the oven to 350°F.
Prepare a 9x5” loaf pan with nonstick cooking spray and parchment paper.
Mix sugars, oil, vanilla, and apple sauce together in a large mixing bowl.
Mash bananas (2-3 should make a cup) with soymilk and add to wet ingredients. Mix.
In a smaller bowl, measure out dry ingredients: flour, baking powder, baking soda, and salt.
Combine wet and dry ingredients. Mix thoroughly.
Fold in chopped strawberries.
Put the batter into a prepared baking pan and bake for 30 minutes. Then remove from the oven, let cool, and enjoy!
