Tofu Quesadillas

Here’s a tasty twist on a classic quesadilla with melty cheese and seasoned tofu that come together for an easy, kid‑friendly meal.

Ingredients

  • 1 block firm tofu drained and crumbled
  • 2 tablespoons olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup shredded cheese Monterey Jack or Cheddar
  • 4 large tortillas
  • Salt and pepper to taste

Instructions

  • Heat one tablespoon of olive oil in a skillet over medium‑high heat.
  • Cook the diced onion until soft, about 3–4 minutes.
  • Add the garlic and cook for another minute.
  • Stir in the crumbled tofu and heat through.
  • Warm a tortilla in a separate pan.
  • Add half of the tofu mixture to one side of the tortilla and top with half of the cheese.
  • Fold the tortilla in half.
  • Cook 2–3 minutes until the outside is crisp and the cheese melts.
  • Repeat with the remaining ingredients.
  • Cooking time: About 15–20 minutes.
  • Serve with: Salsa, sour cream, avocado, or cilantro for extra flavor.
