Spinach Quiche

Servings: 6 servings

Ingredients
  

  • 1 tsp. vegetable oil
  • 1/3 cup diced onion
  • 1/3 cup diced fresh tomatoes
  • 1 package 5 ounces fresh spinach
  • 1 cup Plain Nonfat Yogurt
  • 6 eggs
  • 3/4 cup shredded reduced fat mozzarella

Method
 

  1. Preheat oven to 350°.
  2. Heat oil in sauté pan over medium heat. Add onions, then cook and stir 3-4 minutes until soft and slightly golden. Add tomatoes and spinach, then cook 1-2 minutes or until spinach is wilted.
  3. Whisk eggs in medium bowl, then add yogurt and whisk until smooth. Add spinach mixture and cheese and stir to blend.
  4. Pour mixture into 9-inch pie plate. Bake 30-35 minutes or until set.
