Fruit Salad With Greek Yogurt Dressing

Bursting with color, naturally sweet fruit and a tangy, creamy yogurt dressing, this fruit salad will be a crowd-pleaser at your next summer gathering.
Prep Time 15 minutes

Ingredients
  

  • For the dressing:
  • 1 ½ cups vanilla Greek yogurt
  • Juice of 1 lemon
  • 2 tsp vanilla extract
  • For the fruit salad:
  • 1 lb strawberries washed, hulled and sliced
  • 1 Granny Smith apple washed, cored and diced
  • 1 pint blueberries washed and dried
  • ½ lb grapes of your choice washed and halved
  • ½ pineapple washed, peeled, cored and diced
  • ½ cup chopped pecans could use walnuts or pistachios instead

Method
 

  1. Combine all dressing ingredients in a small bowl. Whisk to combine until smooth.
  2. Combine all of the fruit in a large bowl. Pour dressing on top of the fruit mixture and gently toss to combine. Top with chopped pecans.
  3. Let chill for about 30 minutes to 1 hour to let the flavors meld together prior to serving.

Notes

Use any combination of fruits that you prefer.
