Salmon Salad with Strawberry Yogurt Balsamic Vinaigrette

A protein-packed salad filled with crunchy veggies and topped with a creamy strawberry probiotic yogurt dressing.

Ingredients
  

  • 4 cups chopped romaine lettuce
  • 1 cup diced cucumber
  • 1 cup diced red or orange bell pepper
  • ½ cup diced red onion
  • 1 medium avocado diced
  • 1 7 oz can salmon, packed in water
  • 4 large strawberries diced
  • ½ cup chopped pistachios optional
  • Dressing
  • 1 tbsp extra-virgin olive oil
  • 2 tbsp balsamic vinegar
  • 3 tbsp strawberry probiotic yogurt
  • Pinch of salt and pepper

Method
 

  1. Divide salad ingredients into 2 large bowls.
  2. Mix dressing ingredients in a small bowl to combine.
  3. Pour dressing over salads. Add optional nuts and seeds, as desired, and serve.
