Egg, Tofu & Veggie Scramble

This hearty scramble mixes eggs, tofu, and veggies for a simple, filling breakfast that comes together quickly.

Ingredients
  

  • 2 large eggs
  • ½ cup firm tofu crumbled
  • ½ cup diced bell peppers
  • ¼ cup diced onion
  • ½ cup spinach or other leafy greens
  • ¼ cup cheddar cheese
  • Salt and pepper to taste
  • Olive oil or butter for cooking

Method
 

  1. Add a little oil or butter if needed, then sauté the onions and bell peppers for 3–4 minutes until soft.
  2. Stir in the spinach and cook until wilted.
  3. Add the crumbled tofu and cook for 2–3 minutes so it picks up the flavors in the pan.
  4. Whisk the eggs with the cheese and salt and pepper, then pour them into the skillet. Gently stir to combine with the veggies and tofu. Cook until the eggs are just set.

Notes

Serve warm — great on its own or with your favorite toppings
