WIC Cauliflower

Cauliflower Parmesan

This hearty, healthy and delicious cauliflower parmesan recipe is full of flavor and uses a variety of your WIC benefits!

Ingredients
  

  • 12 oz. Mozzarella Cheese sliced
  • 1/2 cup Grated Cheese Parmesan if available.
  • 1 large head cauliflower
  • 2 cups flour
  • 2 eggs
  • 1 cup milk
  • 1 box Italian-seasoned breadcrumbs Optionally make your own using stale bread!
  • 32 oz. jar tomato sauce
  • 1 cup olive oil
  • Salt and pepper to taste

Method
 

  1. Cut off the base of the cauliflower head so that it forms a flat surface. Cut away the thick green stems. Stand the head up on the cut end so the floret is facing up. Slice to make 1-inch thick cauliflower steaks.
  2. In 3 separate large bowls: add flour to one bowl, in another bowl whisk eggs and milk, and the third bowl should have the breadcrumbs.
  3. Dip the cauliflower in the flour, then the egg mixture and then cover in breadcrumbs.
  4. Place breaded cauliflower steaks on greased baking sheet.
  5. Drizzle oil over the breaded cauliflower, add salt and pepper and bake at 400 F degrees for 25 minutes.
  6. Remove cauliflower steak, top with some tomato sauce and fresh mozzarella slices. Return to oven for another 15 -20 minutes.
  7. Let rest for a few minutes, sprinkle with Parmesan and serve with a side of pasta or sautéed greens.
