Ingredients
- 2 cups cooked/boiling bag or instant brown rice (WIC approved)
- 1 small onion (chopped) (WIC approved)
- 2 cups cooked kidney beans or one 15 oz. can (rinsed, drained) (WIC approved)
- 8 whole wheat totillas (6-8 inches) (WIC approved)
- 1/2 cup Salsa
- 2 ounces cheddar cheese (shredded) or 1/2 cup shredded cheese (WIC approved)
Instructions
- Preheat oven to 300° degrees.
- Peel the onion, and chop it into small pieces.
- Drain the liquid from the cooked (or canned) kidney beans.
- Mix the rice, chopped onion, and beans in a bowl.
- Put each tortilla on a flat surface.
- Put ½ cup of the rice and bean mix in the middle of each tortilla.
- Fold the sides of the tortilla to hold the rice and beans.
- Put each filled tortilla (burrito) in the baking pan.
- Bake for 15 minutes.
- While the burritos are baking, shred the 2 ounces of cheese.
- Pour the salsa over the baked burritos. Add cheese.
- Serve the burritos warm.

Cooking Dry Beans (makes 2 cups cooked) 1 cup dried beans 5 cups water Choose one of the following ways to soak your beans: * Hot Soak: Hot soaking helps reduce intestinal gas. For each cup of dry beans, add 5 cups hot water; heat to boiling and let boil 2 to 3 minutes. Remove from heat, cover and set aside for up to 4 hours. * Quick Soak: For cup of dry beans, add 5 cups hot water; heat to boiling and let boil 2 to 3 minutes. Remove from heat, cover and set aside for at least one hour. * Overnight Soak: For each cup dry beans, add 5 cups cold water and let soak overnight, or at least 8 hours. Cook: Drain soaking water and rinse beans. Cover beans with fresh water. Simmer for 1½ to 2 hours until tender.
