Method
- Preheat oven to 400°F.
- Lightly grease 12-cup muffin tin or place paper liners in muffin tin.
- Beat butter, sugar and egg with an electric mixer until fluffy.
- Add yogurt and vanilla and beat until smooth.
- Combine flour, baking powder, cinnamon and salt in a medium bowl.
- Add flour mixture to yogurt mixture and mix well.
- Gently stir in bananas. Spoon batter into muffin cups, filling each one about ¾ full.
- Bake 20 mins until baked through.
