Banana Bread Pudding on a plate

Banana Bread Pudding

Ingredients
  

  • 2 slices sprouted grain or whole grain bread cubed.
  • 1 ripe banana divided in half
  • 1 tbs chopped walnuts
  • 1 tbs ground flax seeds
  • ½ cup soymilk
  • ½ cup silken tofu
  • ½ tsp vanilla extract
  • ½ tsp cinnamon
  • ¾ tsp 2 packets stevia extract or sweetener of choice

Method
 

  1. Preheat oven to 375°F. Place cubed bread in a medium-sized bowl.
  2. Slice one half of the banana into small pieces. Add it to the bowl along with the chopped walnuts and ground flax seed.
  3. Place the soymilk, silken tofu, vanilla, cinnamon, sweetener and remaining half of the banana in a blender and blend at low speed for a few seconds. Stop when ingredients are mixed together and tofu is smooth. (Be careful not to over mix – you don’t want the liquid to be too thin.)
  4. 4.Pour the mixture into the bowl and mix together well, so that the bread is completely coated with the liquid.
  5. Transfer the mixture to a small baking dish that has been coated with nonstick cooking spray.
  6. Bake on the middle rack in the oven for 30 mins. Remove from oven and let cool for a few minutes before serving.
