Ingredients
  

  • ½ cup light brown sugar packed
  • ¼ cup granulated sugar
  • 1/3 cup vegetable oil or liquid coconut oil
  • 2 tsp vanilla extract
  • ½ cup applesauce
  • ½ cup original or unsweet soymilk
  • 1 cup mashed bananas 2-3 should make a cup
  • cup all-purpose flour
  • ½ tsp baking powder
  • 1 tbsp baking soda
  • ½ tsp salt
  • 1 ½ cups fresh strawberries chopped

Method
 

  1. Preheat the oven to 350°F.
  2. Prepare a 9 x 5” loaf pan with non-stick cooking spray and parchment paper.
  3. Mix sugars, oil, vanilla and applesauce together is a large mixing bowl.
  4. Mash bananas with soymilk and add to wet ingredients.
  5. In a smaller bowl, measure the dry ingredients: flour, baking powder, baking soda, and salt.
  6. Combine wet and dry ingredients. Mix thoroughly.
  7. Fold in chopped strawberries.
  8. Put the batter into a prepared baking pan and bake for 30 mins. Then remove from the oven, let cool and enjoy!
