Spinach quiche in a pie pan

Spinach Quiche

A classic savory quiche made with spinach, tomato, onion, cheese, and yogurt.

Ingredients
  

  • 1 tsp vegetable oil
  • 1/3 cup diced onion
  • 1/3 cup diced fresh tomatoes
  • 1 pkg 5 oz fresh spinach
  • 1 cup plain yogurt or soymilk dairy-free yogurt
  • 6 eggs
  • ¾ cup shredded reduced fat mozzarella

Method
 

  1. 1.Preheat oven to 350° F.
  2. Heat oil in sauté pan over medium heat. Add onions, then cook and stir 3-4 mins until soft and slightly golden. Add tomatoes and spinach, add cook 1-2 mins or until spinach is wilted.
  3. Whisk eggs in medium bowl, then add yogurt and whisk until smooth. Add spinach mixture and cheese and stir to blend.
  4. Pour mixture into a lightly greased 9-inch pie plate. Bake 30-35 minutes or until set.
