Vegetarian One Pot Lasagna Soup
Our Vegetarian One Pot Lasagna is creamy, dreamy comfort food in a bowl. In addition to the rich tomato broth and melted cheese, this dish features eggplant, bell peppers and greens. You get classic lasagna flavor and extra veggies in one warm, cozy package. Even better, with just one pot, you’ll be finished with the dishes and cuddled under a blanket in no time!

Method
- Heat 2 tablespoons of olive oil over medium heat in a large pot. Add onion and cook for 5-6 minutes until translucent. Add eggplant, bell pepper, and the remaining tablespoon of olive oil, and saute an additional 9-10 minutes, until eggplant is softened. Add garlic and cook for 1 minute until fragrant.
- Stir in marinara and broth (or hot water + bouillon paste). Add Italian seasoning and ground black pepper. Increase heat to medium high and bring to a gentle boil.
- Stir in broken lasagna noodles and cook at a gentle boil for approximately 15 minutes, or until noodles are al dente.
- Stir in heavy cream and spinach leaves. Cook 3-5 minutes until greens are wilted.
- Stir in Parmesan and mozzarella cheese until just melted and creamy. Remove from heat.
- Serve: ladle into bowls and top with 1-2 tablespoons of ricotta cheese and a few fresh basil leaves.
