  • 1 small eggplant diced (approximately 1 ½ cups)
  • 1 medium red bell pepper chopped (approximately 1 cup)
  • 3 cloves garlic minced
  • 1 24-ounce jar marinara sauce
  • 2 ½ cups vegetable broth or 2 ½ cups hot water + 2 tsp bouillon paste
  • 1 teaspoon Italian seasoning
  • â…› teaspoon ground black pepper
  • 8 ounces lasagna noodles broken into bite-sized pieces
  • ½ cup heavy cream
  • ¼ cup grated parmesan cheese
  • 1 cup shredded mozzarella cheese
  • 1 cup spinach stems removed and leaves torn or chopped
  • ½ cup ricotta for topping
  • ¼ cup basil leaves for garnish

Method

  1. Heat 2 tablespoons of olive oil over medium heat in a large pot. Add onion and cook for 5-6 minutes until translucent. Add eggplant, bell pepper, and the remaining tablespoon of olive oil, and saute an additional 9-10 minutes, until eggplant is softened. Add garlic and cook for 1 minute until fragrant.
  2. Stir in marinara and broth (or hot water + bouillon paste). Add Italian seasoning and ground black pepper. Increase heat to medium high and bring to a gentle boil.
  3. Stir in broken lasagna noodles and cook at a gentle boil for approximately 15 minutes, or until noodles are al dente.
  4. Stir in heavy cream and spinach leaves. Cook 3-5 minutes until greens are wilted.
  5. Stir in Parmesan and mozzarella cheese until just melted and creamy. Remove from heat.
  6. Serve: ladle into bowls and top with 1-2 tablespoons of ricotta cheese and a few fresh basil leaves.
