Ingredients
- 3 ½ pounds potatoes russet or yellow are best
- 2 tablespoons salt
- 2 cups low-fat or nonfat milk
- 6 cloves garlic crushed
- 6 ounces parmesan cheese grated
Instructions
- Dice potatoes (this speeds up the cooking time).
- Place potatoes in a large saucepan, add salt, and cover potatoes with water. Bring to a boil. Cook potatoes for about 15 minutes or until the potatoes fall apart when poked with a fork.
- Warm milk and garlic in the microwave or in a small saucepan (do not boil). Set aside.
- Remove potatoes from heat and drain the water. Mash the cooked potatoes and add the milk and garlic mixture. Mix in parmesan cheese. Let stand for 5 minutes and serve.
