Ingredients
- 6 eggs
- 1 sweet potato
- 1 green bell pepper
- 1 tbsp olive oil
Instructions
- Peel the sweet potato and dice into small cubes
- Put the diced potatoes in a bowl and microwave on high for 3 mins
- Remove the seeds and stem of the bell pepper andthen slice and dice it
- Dice the green onions
- Add olive oil to pan over medium heat
- Add the diced sweet potatoes to the pan, thenthe bell peppers, and then the green onions
- Whip 6 eggs together
- Pour the whipped eggs into the pan
- Scramble the eggs and vegetables together
- Enjoy!
