Sweet Potato Breakfast Scramble

Sweet Potatoes and eggs combine to make a zesty and hearty breakfast

  • 6 eggs
  • 1 sweet potato
  • 1 green bell pepper
  • 1 tbsp olive oil


  • Peel the sweet potato and dice into small cubes
  • Put the diced potatoes in a bowl and microwave on high for 3 mins
  • Remove the seeds and stem of the bell pepper andthen slice and dice it
  • Dice the green onions
  • Add olive oil to pan over medium heat
  • Add the diced sweet potatoes to the pan, thenthe bell peppers, and then the green onions
  • Whip 6 eggs together
  • Pour the whipped eggs into the pan
  • Scramble the eggs and vegetables together
  • Enjoy!
