Wheatberries with cinnamon, dried fruit, and yogurt

Wheat berries are an excellent source of fiber and plant based protein Oranges are full of vitamin C and have fiber and calcium Foods that are high in fiber and plant based protein help prevent and control diabetes and reduce the risk of heart disease

Ingredients
  

  • 1/4 C cooked wheat berries
  • 1 stick cinnamon or sprinkled ground cinnamon
  • 1-2 small oranges zested once oranges are zested, save them to squeeze for the juice
  • 1/2 C dried fruits raisins/cranberries/cherries
  • 1 C orange juice
  • 1/4 C chopped nuts optional
  • 1 C Greek yogurt

Method
 

  1. Soak the dried fruit in the orange juice until they absorb most of the liquid
  2. Mix the soaked fruit and the remaining juice into the cooked wheat berries
  3. Add the zest from the oranges and squeeze out juice directly into the bowl
  4. Add nuts, if using
  5. Stir in Greek yogurt until you have a creamy consistency
