Wheatberries with cinnamon, dried fruit, and yogurt

Wheat berries are an excellent source of fiber and plant based protein Oranges are full of vitamin C and have fiber and calcium Foods that are high in fiber and plant based protein help prevent and control diabetes and reduce the risk of heart disease

Ingredients

  • 1/4 C cooked wheat berries
  • 1 stick cinnamon or sprinkled ground cinnamon
  • 1-2 small oranges zested once oranges are zested, save them to squeeze for the juice
  • 1/2 C dried fruits raisins/cranberries/cherries
  • 1 C orange juice
  • 1/4 C chopped nuts optional
  • 1 C Greek yogurt

Instructions

  • Soak the dried fruit in the orange juice until they absorb most of the liquid
  • Mix the soaked fruit and the remaining juice into the cooked wheat berries
  • Add the zest from the oranges and squeeze out juice directly into the bowl
  • Add nuts, if using
  • Stir in Greek yogurt until you have a creamy consistency
