Method
- Heat one tablespoon of olive oil in a skillet over medium‑high heat.
- Cook the diced onion until soft, about 3–4 minutes.
- Add the garlic and cook for another minute.
- Stir in the crumbled tofu and heat through.
- Warm a tortilla in a separate pan.
- Add half of the tofu mixture to one side of the tortilla and top with half of the cheese.
- Fold the tortilla in half.
- Cook 2–3 minutes until the outside is crisp and the cheese melts.
- Repeat with the remaining ingredients.
- Cooking time: About 15–20 minutes.
- Serve with: Salsa, sour cream, avocado, or cilantro for extra flavor.
