Tofu Quesadillas

Here’s a tasty twist on a classic quesadilla with melty cheese and seasoned tofu that come together for an easy, kid‑friendly meal.
Cook Time 15 minutes

Ingredients
  

  • 1 block firm tofu drained and crumbled
  • 2 tablespoons olive oil
  • 1 small onion diced
  • 2 cloves garlic minced
  • 1 cup shredded cheese Monterey Jack or Cheddar
  • 4 large tortillas
  • Salt and pepper to taste

Method
 

  1. Heat one tablespoon of olive oil in a skillet over medium‑high heat.
  2. Cook the diced onion until soft, about 3–4 minutes.
  3. Add the garlic and cook for another minute.
  4. Stir in the crumbled tofu and heat through.
  5. Warm a tortilla in a separate pan.
  6. Add half of the tofu mixture to one side of the tortilla and top with half of the cheese.
  7. Fold the tortilla in half.
  8. Cook 2–3 minutes until the outside is crisp and the cheese melts.
  9. Repeat with the remaining ingredients.
  10. Cooking time: About 15–20 minutes.
  11. Serve with: Salsa, sour cream, avocado, or cilantro for extra flavor.
