Garlic Mashed Potatoes

Easy and quick, 5-ingredient mashed potatoes. Enjoy them as a vegetable side dish with roasted chicken or as the base for an entrée-in-a-bowl topped with low-fat yogurt, steamed broccoli, and canned chicken.

Ingredients

  • 3 ½ pounds potatoes russet or yellow are best
  • 2 tablespoons salt
  • 2 cups low-fat or nonfat milk
  • 6 cloves garlic crushed
  • 6 ounces parmesan cheese grated

Instructions

  • Dice potatoes (this speeds up the cooking time).
  • Place potatoes in a large saucepan, add salt, and cover potatoes with water. Bring to a boil. Cook potatoes for about 15 minutes or until the potatoes fall apart when poked with a fork.
  • Warm milk and garlic in the microwave or in a small saucepan (do not boil). Set aside.
  • Remove potatoes from heat and drain the water. Mash the cooked potatoes and add the milk and garlic mixture. Mix in parmesan cheese. Let stand for 5 minutes and serve.
