Garlic Mashed Potatoes
Easy and quick, 5-ingredient mashed potatoes. Enjoy them as a vegetable side dish with roasted chicken or as the base for an entrée-in-a-bowl topped with low-fat yogurt, steamed broccoli, and canned chicken.

- 3 ½ pounds potatoes russet or yellow are best
- 2 tablespoons salt
- 2 cups low-fat or nonfat milk
- 6 cloves garlic crushed
- 6 ounces parmesan cheese grated
Dice potatoes (this speeds up the cooking time).
Place potatoes in a large saucepan, add salt, and cover potatoes with water. Bring to a boil. Cook potatoes for about 15 minutes or until the potatoes fall apart when poked with a fork.
Warm milk and garlic in the microwave or in a small saucepan (do not boil). Set aside.
Remove potatoes from heat and drain the water. Mash the cooked potatoes and add the milk and garlic mixture. Mix in parmesan cheese. Let stand for 5 minutes and serve.
