Strawberry Banana Bread

Delicious, fruity, and flavorful bread for morning, noon or night. Vegan and dairy-free

Ingredients
  

  • 1/2 Cup Light Brown Sugar Packed
  • 1/4 Cup Granulated Sugar
  • 1/3 Cup Vegetable Oil Or Liquid Coconut Oil
  • 2 Tsp Of Vanilla Extract
  • 1/2 Cup Applesauce
  • 1/2 Cup Plain soymilk
  • 1 Cup Of Mashed Bananas
  • 1 3/4 Cup Of All-Purpose Flour
  • 1/2 Tsp Baking Powder
  • 1 Tbsp Baking Soda
  • 1/2 Tsp Salt
  • 1 1/2 Cups Of Fresh Strawberries Chopped

Method
 

  1. Preheat the oven to 350°F.
  2. Prepare a 9x5” loaf pan with nonstick cooking spray and parchment paper.
  3. Mix sugars, oil, vanilla, and apple sauce together in a large mixing bowl.
  4. Mash bananas (2-3 should make a cup) with soymilk and add to wet ingredients. Mix.
  5. In a smaller bowl, measure out dry ingredients: flour, baking powder, baking soda, and salt.
  6. Combine wet and dry ingredients. Mix thoroughly.
  7. Fold in chopped strawberries.
  8. Put the batter into a prepared baking pan and bake for 30 minutes. Then remove from the oven, let cool, and enjoy!
