Ingredients
- 1/2 Cup Light Brown Sugar Packed
- 1/4 Cup Granulated Sugar
- 1/3 Cup Vegetable Oil Or Liquid Coconut Oil
- 2 Tsp Of Vanilla Extract
- 1/2 Cup Applesauce
- 1/2 Cup Plain soymilk
- 1 Cup Of Mashed Bananas
- 1 3/4 Cup Of All-Purpose Flour
- 1/2 Tsp Baking Powder
- 1 Tbsp Baking Soda
- 1/2 Tsp Salt
- 1 1/2 Cups Of Fresh Strawberries Chopped
Instructions
- Preheat the oven to 350°F.
- Prepare a 9x5” loaf pan with nonstick cooking spray and parchment paper.
- Mix sugars, oil, vanilla, and apple sauce together in a large mixing bowl.
- Mash bananas (2-3 should make a cup) with soymilk and add to wet ingredients. Mix.
- In a smaller bowl, measure out dry ingredients: flour, baking powder, baking soda, and salt.
- Combine wet and dry ingredients. Mix thoroughly.
- Fold in chopped strawberries.
- Put the batter into a prepared baking pan and bake for 30 minutes. Then remove from the oven, let cool, and enjoy!
