If you have kids, picky eaters or just a large crew to feed, this dinner makes it easy. Assemble a Baked Potato Bar for the Whole Family so everyone can choose what they like! Ingredients
  

  • For the potatoes
  • 6 medium russet potatoes
  • 1-2 tablespoons vegetable oil
  • For the toppings
  • 2 tablespoons olive oil divided
  • 1 large onion sliced
  • 1 cup mushrooms sliced
  • 2 cups broccoli florets
  • ½ cup fully cooked bacon bits
  • 1 cup sour cream
  • 1 cup shredded cheddar cheese
  • 1 cup diced roma tomatoes
  • ½ cup sliced green onions
  • ¼ cup jarred jalapeno slices

Method
 

  1. Preheat oven to 425F.
  2. Prick potatoes all around with a fork, lightly brush each with vegetable oil and bake for 40 minutes. *For a quicker alternative, prick potatoes all around with a fork, wrap in a damp paper towel and microwave for 7-8 minutes.
  3. While the potatoes are baking, prepare the toppings:
  4. For the onions and mushrooms, add 1 tablespoon of olive oil to a pan over medium-low heat. Caramelize onions for 8-10 min. Add the mushrooms and sauté for an additional 3-5 minutes until softened.
  5. For the broccoli, add 1 tablespoon of olive oil to the pan over medium heat. Sauté until tender for 6-8 minutes, adding a few teaspoons of water as needed to soften.
  6. For assembly: place all toppings in small bowls and have your guests mix and match!
