Blueberry Muffin Overnight Oats

These vibrant blueberry muffin-inspired overnight oats are the perfect start to your day!

Ingredients
  

  • 1 cup milk of choice
  • ½ cup frozen blueberries
  • 1 tablespoon honey or maple syrup
  • ½ lemon juiced
  • ½ teaspoon ground cinnamon
  • ¼ – ½ teaspoon almond extract depending on taste preference
  • Pinch of salt
  • 1 cup quick oats divided
  • 1 tablespoon chia seeds divided
  • Toppings: granola fresh blueberries, peanut butter, extra honey, nuts or seeds

Equipment

  • food processor or blender

Method
 

  1. In a food processor or blender, add milk, frozen blueberries, honey, lemon juice, cinnamon, almond extract and salt. Blend until smooth. The mixture may be frothy, let it sit for a few minutes to settle.
  2. Add ½ cup of oats and ½ tablespoon of chia seeds into two separate airtight containers.
  3. Pour the blueberry milk mixture into each container, evenly.
  4. Stir each container to combine evenly.
  5. Put lid on each container and place in refrigerator for at least 4 hours, preferably overnight.
  6. The next day, remove from fridge and stir.
  7. Add your toppings of choice and enjoy either hot or cold.
